If you ever feel like making your guests or family and friends really point at you in a nice way, then you’ll need to cook them some fritters. Also, with this nice recipe, you no longer have to be stuck with some boring vegetables every dinner time.

Have this ready:

  • Salt
  • Vegetable oil
  • Greek yogurt or sour cream – optional
  • 2 lightly beaten eggs
  • Dill – optional
  • Shredded zucchini – 4 cups
  • All-purpose flour – 2/3 cup
  • Sliced scallions – 1/3 cup

Directions:

  • Grate the zucchinis (2 of them) and add some salt. Put that aside.
  • Whisk the eggs in a bowl
  • Remove the excess water from the zucchinis (by squeezing) and put them in the bowl
  • Put in the scallions, baking soda, dill and the flour, and mix
  • Let a pan heat to medium and then fry the mixture till it’s brown on both sides

Serve with some Greekyoghurt or sour cream. Yummy!
