The barbeque boys are back with a bang, this time with a new way of preparing meatloaf. With them, they have 5 pounds of beef ready to prepare.But what they do surprised me. Instead of cutting the meat to a loaf form, they flatten it in form of a crust of a loaf then followed by adding a tasty dressing before rolling it into a round form.

Below is how to proceed in making of this delicious recipe.

  • Frist preheat the grill to 300 F, with coals
  • Smoke the bacon by putting it opposite the hot coals.
  • Take it off the coal after an hour and cut it.
  • Cut the onion
  • Grate the cheese to your desired amount
  • Make sure to wet the cutting board with beer or water to avoid sticking of the mixture
  • Place ground block on the cutting board and knead like dough until it attains an half inch thickness
  • Shape the edges to make it square before rolling it
  • Add SPG on top of meat to make it tasty
  • Smear marinara sauce on it using a brush
  • Top it with cut onions, bacon and grated cheese
  • Start rolling the ground chuck front and back. Be careful to maintain the toppings inside.
  • Put the rolls oppositely to the hot coals so as to cook indirectly
  • Apply another marinara layer together with three pieces of raw bacon
  • Place the cover on the grill and leave it to cook for 50 minutes
  • Uncover the grill and add a layer of grated cheese to the meatloaf
  • Cover the grill once more and let the cheese melt fully. Check the temperature with a thermometer to ensure its cooking at 150-160
  • Remove from grill and leave to cool down for 10 minutes
  • Slice it and serve.
